Chewy Dark Chocolate Orange Cookies

**High Altitude Instructions: Reduce oven temp. by 25 degrees, and reduce sugar by 2 tbsp for every 1 cup.

½ cup light brown sugar
½ cup granulated sugar (I prefer to use Baker’s sugar, it is slightly more fine than regular sugar.)
½ cup unsalted butter at room temp.
1 large egg
1 tsp. real vanilla extract
1 cup sifted All Purpose flour
½ cup cocoa powder
½ tsp. baking soda
½ tsp. salt
1 Orange
1-2 cups of powdered sugar

Optional: Dark chocolate chips

Preheat oven to 375 degrees.
In a large mixing bowl, cream the sugars and butter until very light and fluffy (the fluffier, the better.) Add egg, and beat to incorperate. Add vanilla, beat to incorperate.

In another bowl, sift together flour, cocoa powder, baking soda, and salt. Add dry ingredients to the butter mixture slowly until a soft dough is formed. (If adding chocolate chips, add them now.)

Place dough in balls on baking sheet lined with aluminum foil. Bake for 10-12 minutes.

Zest orange and place it in a mixing bowl. Juice the orange and set aside. Place 1 cup of powdered sugar in a bowl. Add OJ to the sugar one table spoon at a time until a glaze forms. Add zest to the glaze.

When the cookies have cooled, dip the tops into the glaze. Allow the glaze to dry.
