Sippin on gin and juice...
Here's my third and final entry for Iron Cupcake's music challenge. This is my "Gin and Juice" cupcake. It is a cranberry and gin poundcake. RECIPE FOR GIN AND JUICE CUPCAKES:
1 3/4 cups all purpose flour
1 c. Baker's sugar
2 tsp. baking powder
1/3 cup vegetable oil
4 egg whites
1/2 cup cranberry juice concentrate
1-2 tbsp. gin
Line 14-16 muffin cups with paper liners. In a mixing bowl sift together dry ingredients.
Add oil and juice. Beat until smooth. Add enough gin to loosen the mixture slightly. Beat egg whites until stiff. Fold into mixture in two batches.
Pour into cupcake liners and bake at 350 degrees for apx. 15 minutes. Cool for 10 minutes.
GIN GLAZE:
3/4 cup powdered sugar
1-2 oz. gin
3 drops of red food coloring
Mix all three ingredients together, add the enough gin to make your desired consistency of glaze. Hold each cupcake by it's base and dip the top into the bowl of glaze, let the excess drip off, set aside and top with dried cranberries. Allow the glaze to dry. Then just lay back, and sip on your gin and juice.
